Keto Low Carb Holiday Food

Happy belated Thanksgiving! I am sitting here currently sore, tired, but thankful after a day full of festivities, friends, and family. I am excited to sit here and share with you some of my favorite parts of our celebration! We had a smaller gathering which allowed for us all to sit around one table. Which I definitely took advantage of and ran with! I also wanted to make sure there were a good amount of low carb options, as I follow a Keto diet. Lastly, I was able to pull together a few affordable Thanksgiving touches thanks to some inspiration from other bloggers and friends. So buckle in and get ready because it is about to be information overload!

Let’s Start With The Food!

Naturally it feels right to begin by talking about the food. The specific dishes I made that are Keto friendly were a charcuterie board, cauliflower mash, rosemary garlic knots, and pumpkin pie. The cauliflower mash was actually a purchase from Costco, that I literally threw in the microwave. And it was DELICIOUS! So I only wanted to briefly mention it.

The Charcuterie board was a must have for me as there are a plethora of keto friendly options often included. And let’s be honest, they are cute af. I was ecstatic to find this cute cheese board in the ginormous pile at HomeGoods for $5!! A literal steal! This was my first charcuterie board that I assembled on my own. With a few helpful tips from my cousins, I think it came out pretty well! Tell me what you think in the comments!

The Keto friendly Garlic Rosemary Knots were one of my more adventurous feats. I had never tested the recipe before and to be honest I was intimidated. Of course, the timing of thanksgiving morning was quickly dwindling away. Luckily, this recipe went off without a hitch and they were a hit! Seriously one of my favorite Keto bread recipes i’ve tried to date! I have the recipe tagged here for anyone who wants to try. Which I highly recommend!

This was actually my second keto pumpkin pie I made this year. The first one I took to a friendsgiving and I was so nervous my filling would be undercooked. Luckily, it came out PERFECT and everyone loved it! I got lucky, because I definitely had to bake it WAY longer than the recipe suggested. Unfortunately I was not as lucky on actual Thanksgiving lol.

With the added pressure of guests coming over, and multi-tasking, I waited too long to cover the crust with foil. It ended up browning [aka burning] a lot sooner than I expected. In a panic, I slid the tray out and the uncooked filling went everywhere haha. So needless to say, this pie came out way below my expectations. Aesthetically that is. Taste wise, it was still a hit and everyone enjoyed it. However the exposed crust was definitely overdone.

Also, how freakin’ cute is this ‘made with love’ banner? Thanks to inspiration from a photo I found on Instagram I quickly recreated it the morning of Thanksgiving. I used the website called ‘canva’ and printed it on cardstock. Then I just grabbed some wooden skewers and taped it on. Super easy and cheap!

Now let’s get to the decorating details. As I mentioned, we never really had a formal table thanksgiving dinner. So the inventory available was pretty low. We had a few things we picked up for last Christmas’ breakfast. However there were a few things we still needed.

The Homemade Table Cloth

One of those being an 80″ by 80″ table cloth. In leiu of adding a leaf to our dining table, we decided to try making it a larger square. This was inspired by the table from the aforementioned friendsgiving. I was let in on the detail that a few foldable tables were puzzled together to form the large 8′ x 8′ foot dining table that fit about 18 people! We wanted to give this a try but really struggled finding a table cloth that fit!

So instead, we decided to visit our local bargain fabric store and scored 2.5 yards of fabric for $15! All we needed to do was mill the corners and hem the edges. Sounds easy enough right? That is what I thought lol. However I am a novice sewer and it has been years since I’ve used my sewing machine. Needless to say I ended up with a decent table cloth that took WAY longer than expected to make haha! And learned a few new sewing skills like how to mill a corner.

Next let’s tackle the affordable table decor we scored. There was an awesome deal at Bed Bath and Beyond for these gold chargers. I believe it was 6 for $9.99. We also found another pack of plain white dinner plates at Home Goods to add to the 12 we already owned from last year. We were expecting 12-13 people so we wanted an extra set just in case.

I was inspired by a fellow blogger: Heidi from ‘My Happy Now’ to use paper napkins and tie them into bows, and also to add these cute paper graphics to the plates. [inspo photo here] I once again made these for free in Canva the morning of. They came out super cute and I loved the end result.

Lastly the center piece that was my nemesis! We snagged a few foam pumpkins from target the day before. These were found at the target bargain center for $5 each! We also grabbed a few of the small bottle brush tree’s that were 2 for $10. While in line at home goods we found these faux eucalyptus bundles and lastly a large white Vanilla Pumpkin scented candle for $4. These new finds coupled with some left over birthday flowers and random other knick knacks compiled our center piece.

The only task left was to assemble it. Keep in mind, by the time I got around to putting the center piece together, it was already midnight. After scavenging the house and trying this or that, I thought it was pretty good. However, I decided to add one more vase of flowers and it threw the WHOLE thing off. After trying to put it back, I realized I couldn’t remember how I had it and was hating everything I tried haha. It was then around 1am and I was tired and grumpy. I had to take a ten minute break from arranging, and take a breath. Once I came back I was able to arrange a center piece that I was content with and thankfully could go to bed! Lesson learned, center pieces are hard!

I Can’t Forget About The Makeup

With all the was going on, from burning pumpkin pie crust, to assembling a charcuterie board, I made a point to take a minute to do my makeup. The holidays are some of my favorite moments to do a fun makeup and get great photos. Granted, I didn’t have as much time as I hoped. However, thanks to a recent youtube video I had watched, I was able to whip this look together!

I used the So Jaded Palette by Colourpop that I featured in this post here. It was quick and easy and I was happy with the end result. I had a more casual thanksgiving look but it felt cozy and I was comfortable. That is definitely a requirement for Thanksgiving!

I am so thankful for everything and everyone that went into celebrating Thanksgiving this year. It was a wonderful day! I try to make a daily habit of expressing my gratitude to God and to my loved ones for all of my blessings. There is so much to be thankful for. I was so happy to be able to create a warm and loving environment to celebrate with friends and family. I’m also so thankful to have the space to share these things with you all!
